日比谷の和食ﾚｽﾄﾗﾝ､｢春秋ﾂｷﾞﾊｷﾞ｣でお食事しました｡

大好きなお店のうちの一つです｡
大好きな理由は､たくさんありますが､やっぱり､お食事がとにかく
ｽﾃｷ！
和食なのですが､とても洒落たﾒﾆｭｰのｵﾝﾊﾟﾚｰﾄﾞです｡食材へ
のこだわりがﾒﾆｭｰに表現されていて､これがまた食欲を激しくそ
そるのです（笑）｡
例えば､
｢比内地鶏の炭火焼
放し飼い160日以上､一坪一羽以下で育った『比内鶏』｣とか､
｢昆布〆豆腐
自家製の木綿豆腐を最上級の昆布で〆､風味･旨味を移します｡たっ
ぷりの薬味とともに､さっぱりとお召し上がりください｡｣
といった感じです｡
とにかく､食材にこだわり､ﾚｽﾄﾗﾝの食材担当はそれを生産して
いる方達のもとへ直接赴き､生産者たちの交流をとても大切にしてい
るのだそうです｡
今回は､ｺｰｽﾒﾆｭｰでいただいたのですが､その中でもmixiの写
真で紹介している｢黒毛和牛ｻｰﾛｲﾝ炭火焼｣と､｢福島･薄井農
園の完熟大地米と鰻の鉄釜飯｣が特に良かったです｡

和牛は､ﾍﾞﾘｰﾚｱで､とても柔らかく､大粒の塩と胡椒が添えられ
てありました｡
私は､とにかく｢ｻﾞ･日本人｣として､和牛はお醤油でいただくのが
好みですから､｢お醤油くださ～い｡｣とお願いして､お醤油でいた
だきました｡（実に美味でした･･･｡）
そして､鰻の鉄釜飯は､これまたすごい逸品！写真では､何てことな
いご飯に見えますが､これは共にお食事した友人と各々のお茶碗に分
けた状態｡
私はお米の良し悪しにそれほど敏感ではないのですが､この｢完熟大
地米｣は､一粒一粒が立っていて､本当に美味しかったです！
釜飯って､一つ一つの小さな釜でお米の固い状態から炊き上げるお店
は､けっこう少ないのですが､ここの釜飯は本当にすばらしかったで
す｡
鰻も､真っ白くてﾌﾜﾌﾜ（＾＾）でした｡
ｲﾝﾃﾘｱは､新進気鋭のｱｰﾃｨｽﾄが手がけたとだけあり､とて
もｼｯｸな大人の空間といった造りです｡
ｶｳﾝﾀｰや､ｵｰﾌﾟﾝなｽﾍﾟｰｽもありますが､私はいつも､個室
までは閉じていないｾﾐﾌﾟﾗｲﾍﾞｰﾄの席に通していただいていて､
静か過ぎず､にぎやか過ぎず､お食事やおしゃべりを楽しむのにとて
も好みの空間です｡
やっぱり､和食って素晴らしいﾜ♪と実感した幸せな夜でした｡
